Herbs around the garden
Mint Uses
We, and by that I mean our guests, have access to a prolific amount of mint when staying at The Crest. Yes you’re on holiday, but after you’ve spent the day exploring the South Downs, or had a full day out at Southsea Beach we would like you to think about some of the ways you could help US by using some of that MINT!!
1. Mojito:
- 10 fresh mint leaves
- 1/2 lime, cut into 4 wedges
- 2 tablespoons sugar, or to taste
- 5 or 6 ice cubes
- 1 shot of rum
- 120ml soda water
- Place mint leaves and 1 of the lime wedges into a tall glass.
- Smash or crush the mint and lime to release the mint oils and lime juice.
- Add 2 more lime wedges and the sugar, and crush again to release the lime juice. Do not strain the mixture.
- Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with soda water. Stir, taste and add more sugar if desired. Garnish with the remaining lime wedge.
2. Mint Sauce
- Strip off the mint leaves (a bunch), sprinkle with salt and chop finely.
- Place into a jug, add a table spoon of sugar and pour over 4 table spoons of boiling water, stir and leave to cool.
- Stir in 4 table spoons of white wine vinegar and taste.
- Add more water or vinegar and adjust seasoning to suit your taste.
3. Salads
Chop up a few leaves and add them to your salad along with some watermelon, basil, and feta
4. Tea
Fresh mint, chopped or even just mashed up a little and added to hot water makes a delicious digestive soothing tea.
5. Add it to potatoes
It’s easy yet effective, just pop a few mint leaves into the water when boiling New Potatoes – add butter over cooked potatoes and enjoy
6. We have enough so lets make Mint Julep
- 3 fresh mint leaves
- 1 table spoon of simple syrup
- Crushed ice
- 1 1/2 to 2 tablespoons bourbon
- 1 fresh mint sprig
Place mint leaves and Mint Simple Syrup in a chilled julep cup. Gently press leaves against cup with back of spoon to release flavours. Pack cup tightly with crushed ice; pour bourbon over ice. Insert straw, place mint sprig directly next to straw, and serve immediately. Sprinkle with powdered sugar, if desired.
The garden at The Crest also has an enormous amount of Oregano, Rosemary, Fennel & Chives; ideas coming soon.
